Lately, I’ve been obsessed with roasting veggies. For some reason everything tastes better once roasted! In fact, I usually don’t even bother adding unnecessary spices or sauce when I roast my vegetables. Try it and you will see what I mean!
If you have no idea what to do with your potatoes. Hasselback is the way to go. So easy and effortless, yet it looks like you spent hours prepping! Don’t forget about the kale. I don’t personally enjoy eating raw kale. I prefer blending them in smoothies or turning them into kale chips by simply placing them in the oven for 15 minutes. I mean, who doesn’t like kale chips???
You know what I recently discovered and wish I knew about it sooner?! Veggie pakoras by Spice it Up Foods!!! So crispy and so flavourful – made with potatoes, chickpeas, and spices. I got a huge bag from Costco and I cannot stop eating them! They are a lifesaver for lazy days when I don’t feel like cooking. They are perfect with my roasted veggies!

Veggie Pakora Bowl
🕝 Prep Time: 10 m 🕝 Cook Time: 1 hr Yield: 1 serving
Ingredients
- 8 veggie pakoras
- 1/4 of a cauliflower
- 1/2 of a bell pepper
- 3 potatoes
- 1 avocado
- a handful of kale
- 1 tbsp of nut and seed butter *optional for dipping
Method
- Preheat oven to 425º F. Wash potatoes and slice them into thin slices leaving 1/4 inch at the bottom unsliced. The trick is to place the potato between a pair of chopsticks to prevent you from slicing the potato all the way through. Place on a baking sheet and sprinkle some salt and pepper and drizzle a bit of olive oil on top of the potatoes. Place in the oven for 1 hour.
- Wash and cut the cauliflower, bell pepper, and kale. Place them along with the veggie pakoras onto a baking sheet and place them in the oven for 15 minutes. But wait until the last 15 minutes reminding for the hasselback potatoes then place it in so everything will be ready at the same time.
- Assemble all the roasted veggies onto a bowl and add the sliced avocado and nut and seed dipping butter.
