Don’t be fooled by this photo. It looks like rice but it is actually cauliflower. The best part about this meal is there is absolutely no carbohydrates! I follow a low carbs diet since all carbs turn into sugar, which is not good for you! In fact, I don’t even have a rice cooker at home! I do however, own a blender. If you do not have a blender or food processor at home, please stop what you are doing right now and go buy one! It is essential in the kitchen! When you are back and ready with your blender, let’s get blending! I posted this photo on my instagram and everyone was asking for the recipe, so here it is!
Ingredients: Servings: 5
- 1 cauliflower
- 2 eggs
- 2 cloves garlic
- 1 tbsp fried onions (optional)
- 1 tsp coconut oil (or olive oil)
- 1 tbsp soy sauce
- 1 tbsp fish sauce
Directions: 15 minutes
1. Cut and wash the cauliflower.
2. Blend the cauliflower until it looks like rice.
3. It should look like this, very similar to rice.
4. Add a pinch of salt and black pepper to the eggs in a bowl and mix it.
5. Add a teaspoon of coconut oil to the pan on high heat and cook the eggs for 1-2 minutes, then set aside on a bowl.
6. Add the rest of the coconut oil to the pan on medium heat, add the chopped garlic, and the blended cauliflower. Make sure to keep stirring so the cauliflower doesn’t get stuck at the bottom of the pan. After 1 minute, add the soy sauce, fish sauce, and stir for another minute. Add the fried onion at the end, then turn off the heat.

I used to eat rice at home everyday when I lived with my parents, but now I find myself choosing low carbs for my meals and I’m feeling great! I feel healthier and less bloated. Everyone who knows me knows how much I love to eat, hence my blog name, so this low carbs diet allows me to eat frequently and quite a lot.
