Are you sick? Wouldn’t it be nice if your loved one made you homemade chicken noodle soup?! It’s tasty and much healthier than the canned chicken noodle soup. Trust me. Give it a try!
Ingredients:
Serves: 6-8
- 2 lbs. chicken breasts
- 1 cup noodles/pasta
- 3 carrots
- 2 stalks celery
- 4 cups chicken broth
- 4 cups water
- ½ cup parsley
- 1 tablespoon butter
- ½ onion
- 2 cloves garlic
- 1 teaspoon salt
- 1 teaspoon black pepper
- 1 teaspoon turmeric
Turmeric is my secret ingredient that I love to add in most of my dishes, especially soup. I usually add about a teaspoon of it, which is precisely enough to give it a hint of flavour without it being too strong. Turmeric is so awesome, because it’s been used as an anti-inflammatory medicine for over 5000 years and it helps to prevent various cancers. Chop the carrots, parsley, garlic, onion, celery, and chicken. Add the salt and black pepper and mix it with the chicken. The hardest part is now done! The rest is just a breeze.
In a large pot over high heat, melt the butter.
Add the ingredients in the following order: Garlic, onion, celery, carrots, chicken, turmeric. Give it a little stir before adding the next ingredient.
Cook for about 5 minutes, or until the chicken is not pink anymore. I actually added a tiny bit of chicken broth so that it doesn’t burn.
Next, add 4 cups of chicken broth and 4 cups of water. After the water boils, turn it to medium heat, add the pasta and let it cook for 20 minutes. Finally, add half of the minced parsley.
Top it with some fresh parsley and that’s it! Spend 30 minutes of your day to make this for your loved ones and they’ll forever love you! <3
