Black Truffle Pasta

Do you know how black truffle actually tastes? Oftentimes I get tricked into ordering anything on the menu that has the word truffle in it. However, I don’t even know how it really taste because they give you so little or it could be just the “truffle flavour” only. This year I got Philip’s Pasta and Noodle Maker and have been experimenting on making various pasta and noodles! I’ve been in love with this machine! Pasta and noodles have never tasted this good in my life!!! No more store-bought stuff that takes forever to cook and has a strange plastic smell. I mean, I question how good it is for you, if it has a shelf life of a few years. I was hesitant to buy the machine at first, because I read reviews that it is hard to clean, but I don’t find that at all! You literally add your flour, water, egg, etc, and the machine does the rest in just 1-2 minutes! I’d say cleaning takes 5 minutes and cooking the pasta in boiling water takes 1-2 minutes. You save time in the end since fresh pasta cooks so fast! I cannot wait to experiment with making coloured pasta using spinach juice, beet juice, carrot juice, etc. I am not sponsored by Philips by the way! I just love the product and wanted to share my thoughts on it for those who are thinking about getting one. I also like that they have this smaller model for those who are tight on space in their kitchen (like me!). They also have a model that has a built-in scale.

Look how beautiful the spaghetti came out! I used 2 cups of whole wheat flour, 1 egg, and half a cup of water for this batch.

Black Truffle Pasta

🕝 Prep Time: 6 hrs 🕝 Cook Time: 6 mins Restaurant interface symbol of fork and knife couple free iconYield: 5 servings

Ingredients

  • 25g black truffle
  • 1 lb spaghetti
  • 1 tbsp olive oil
  • 5 cloves garlic, minced
  • salt and ground black pepper to taste

Method

  1. Wash and soak truffle for 6 hours (save truffle water).
  2. Cook spaghetti in boiling water until al dente. Drain pasta.
  3. Add olive oil to skillet over medium-high heat. Cook garlic until golden, 2 minutes, then add truffle + truffle water and cook for another 4 minutes.
  4. Add drained spaghetti to skillet and mix well.
  5. Add salt and pepper to taste. Shave remaining truffle over the top.
